Those were Eva Niosi’s words as she instructed culinary students at the Warwick Area Career and Technical School yesterday in making calzones. Students make 70 calzones and four sheet pizzas to sell from their school counter at lunch. But, as Niosi observes, these are student chefs and not every calzone is going to come out perfectly, despite her emphasis on the need for consistency. “Hopefully, by day two they’re not as consistently awful,” she says with a laugh. The challenge, she said, is for students to meet customer expectations. “Every single customer wants it to be perfect for them.” But then, there are some pluses, too. “They,” she said of the students, “have to eat their homework.”
