My interest in food began early as a child cooking with my parents and having family meals. For me, food became a way to create memories and traditions with others. It was a way to explore new places and meet people of different backgrounds. I would love to be the next celebrity chef because I enjoy how food connects people from all walks of life. This interest grew as a passion for the art of cooking when I became part of the family business, Bistro By The Sea, in southern Rhode Island.

INGREDIENTS
CAKE
1 cup Guinness
1 stick plus 2 tablespoons unsalted butter
¾ cup Dutch pressed cocoa
2 cups sugar
¾ cup sour cream
2 large eggs
1 Tablespoon vanilla extract
2 cups all-purpose flour
2 ½ teaspoons baking soda
1 pinch of salt
CREAM CHEESE FROSTING
8 oz. cream cheese
1 ½ cups confectioner’s sugar
1 Tablespoon vanilla extract
STEP 1
Preheat oven to 350 degrees
STEP 2
Melt butter in Guinness in a medium pan on low heat
STEP 3
Once butter is melted, add sugar and cocoa to pan and stir. Then take off heat
STEP 4
Mix eggs, sour cream, and vanilla in large bowl, then add cocoa mixture from pan.
STEP 5
Add flour, baking soda, and salt to pan and stir until all ingredients are just incorporated.
STEP 6
Butter a 9 inch cake pan (non-stick) and pour in batter.
STEP 7
Cook for 45min-1 hour, checking after 45 min to see if cake is done.
STEP 8
Pull baked cake of oven, bring to room temperature, then remove from pan and place on serving plate.
FROSTING
STEP 1
Place cream cheese, confectioner’s sugar, and vanilla in mixer and mix until frosting is combined and holds stiff peaks.
STEP 2
Frost top of cake and serve.
